Is it possible to select and change the thickness of individual cell lines on a table like I could in the old the Pages?

Yes. I worked with this quite a bit this morning with .docx files.

Select however many cells you want to edit. In the format Inspector, click on Cell, then on the right arrow of Border. There are your choices. Note that you must change the settings to what you want prior to clicking on the border patterns to the right. You have to play with it a while before you get the hang of it.
