The ability to customize the tool bar has been removed from Pages 5. However, 'print' or 'save' etc. have never been available to add in any version of Pages. Leave feedback for the Pages team using the link in the Pages menu.
command p (for Print) has always done the trick without reaching for any button, anywhere.

Just one more thing, I take it there are no additional items I can add to the Toolbar?
I guess I like to feel I have the ability to change things around, is it an phobia.

I think you mean mania, phobia is a fear.
No there isn't, the Toolbar is fixed in stone by Apple. However Apple has posted a list of proposed updates and customisable toolbar is on that. So if you can hold your breath for 6 months you may be in luck.
