Q: where is the categories on the new numbers?

I use categories and subcategories in numbers 09. Qhen i migrate to the new numbers the categories disapeared.

How can i continue with the categories in may archives?

Apple dropped Categories in Numbers 3.0. For now you can continue to use the previous version which is stored in the folder "/Applications/iWork '09"

I am not actually work on bringing back any features

Apple is however working to restonre some features as described here:
