Hi, Can someone give me some instructions on how to change my apple I'd on iBooks on my iPad?
I want to purchase a book but don't want to use the apple I'd that comes up. It doesn't give me an option to change the ID it just asks for the password.

I would recommend making an appointment with the Genius Bar at your local Apple Store. They will get you sorted in a matter of minutes.
If that's not convenient, you can try contacting iTunes Customer Service or Apple ID Support.
It's very embarrassing - I've spent over 3 hours this morning trying to work this through...
and I feel further embarrassed admitting this but I'm still trying to purchase an iBook but my apple ID keeps coming up as an email address that doesn't even have an Apple account. It's the original email address linked to the iPad but I want to use a different email address for my my Apple account - which I have set up.
I can't seem to change this even though I did use your advice through settings - Store. I get so for then I keep getting the message that I can't connect to iTunes store. This is so frustrating - I'm sure there's a simple solution but I cannot figure it out... 😟
Settings > iTunes & App Store > Apple ID
If you change it, you will lose the ability to update and possibly use the apps, books and magazines purchased using the old Apple ID.

Also...I have gotten this MSG...cannot connect to iTunes when the iPad I was using was the iPad I & it couldn't be updated to high enough version to support other apps.
