iPad 2, iOS 7.0.3, same problem on Mac Book Pro
If the undesired email address in not in your Contacts then, when it appears as you are typing an address, it will have an "i" in a circle to its right. Touch the "i" and scroll up to show "Remove From Recents". Touch this to get rid of the email address.
