Hi,
I just cannot find the way to change the language correction. I normally use both Catalan and Spanish and it only corrects Catalan... I knew how to change it in Pages '09, but now it's impossible, I can't figure out how. Can anybody help me?

It is supposed to auto-detect the language. What exactly is happening in your case?
Are the two languages at least separated into separate paragraphs? What tests have you done?
Perhaps the subtle differences between Spanish and Catalan are too much for the software. In which case it seems the wrong approach to spell-checking.
