Can you choose paper when ordering prints?

I absolutely love the photo printing service through Apple. So far, I have only had prints made. I have not tried anything else.

Is there a way to choose matte finish paper versus glossy? The first order I ever made came to me on Matte paper..after that everything is coming to me on Glossy. Is there a way to choose?
