IPad outgoing email always defaults to Gmail

How do I send/reply to email from my Outloook address, and not have it default thru the Gmail server? Whenever I respond to a work email (thru Outlook) on both my IPhone and IPad, the recipient receives my responses from my gmail address. I have deleted the gmail account from both devices, and this still happens. Please help!
