Just picked up a new ipad air during checkout saw the free engraving option but it's a gift and I wasn't 100% sure on what they would want on it, can I add that later after they get it?

No, the engraving option is only available through the online store and must be ordered when you purchase.
if you want it engraved after purchase, you would need to find a service that does this (but this could void the warranty).
The "engraving" is actually a laser etch.
BTW - Engraving and iPad will usually reduce its resale value.

Agreed. I can't count the number of times users have posted here wanting to know to remove the engraving so they could sell the device. Some iPad buy-back programs will charge a fee to remove the engraving so you end up losing out...you pay extra to engrave it (if done later using a 3rd party) and you pay extra to remove it so you can sell it.
