application shortcuts

I was delighted on finding in "The Missing Manual" that System Preferences>keyboard>application shortcuts allowed one to implement ones own shortcuts -

This does seem to work on non-apple programmes, great


But from early attempts to introduce some sense into Mail and TextEdit, it seems that it can't be done on Apple's own programmes even where it would not take over system wide shortcuts


Is this right???

Panic over, maybe, perhaps; I had thought the 3 things that looked like full stops after some menu items were 3 full stops, but good old Dave P points out (ha!) that they are opt;


I have 'save as' back in all applications, yippee


But Mail still insists I use 3 or 4 fingers where 2 would seem perfectly adequate & there are so many menu items and sub-menus maybe most 2 finger things have already been had?
