Like you and the OP and Ltnjzz I miss categories, though I do know there are other ways (not quite as convenient) to reach the same end.
But what are all those unrelated items on this big, unsorted laundry list doing here? Aside from these items being unrelated, some inaccuracies may have crept in. That is, I suppose, a hazard associated with making a list as long and formidable as possible.
2. Numbers 3.0 recognizes YYYY-MM-DD as a date input Automatic Format on my machine. I believe you can change some of the date formats in System Preferences>Language & Region if you want that. (Numbers 3.0 seems to be buggy with dates and your observations in item 19 on dates seem accurate. But this in particular does not seem to be one of the problems, at least not on my machine).
17. Not entirely accurate. File>Open csv works just fine too. It's only pasting comma-separated into a table that is broken (pasting tab-separated into a table works fine).
25. Ignores a very convenient feature of 3.0: context-aware formula help right there in the right panel.
37. There's no English pdf, but there is a lot more multi-lingual documentation than before, I believe. How that can somehow be thought to be a loss of function will escape the many non-English-speaking users of Numbers.
45. These are third-party OS X services created years ago, before Apple's push for more security on the Mac. As far as I can tell, they are essentially abandon-ware; the developer (which makes fine software) hasn't updated these so they are recognized as being from an "identified developer." And since they are third party, it would be accurate to say they are also "Absent in Numbers 2.3".
38, 47, 48. Has Apple announced it will restore features "May 2014"? Or possibly some before in the coming months, as seems to be suggested in its support document on the features to be restored?
Meanwhile, there are good workarounds for a number of the items on the laundry list.
There are also new features and improved features in Numbers 3.0, including some that I suspect will be significant productivity enhancements for a large number of new and some old users. They have been for me.
