I think you'll find Jacket Pictures are not to reset the DVD Icon that appears on the desktop (which i think is what you are trying to do) but is like a Screensaver that kicks in on some DVD players (Sony's for instance) when you press Stop and leave the disc in the player. It displays a picture of your choice on the screen
Fundamentally I don't think it is possible to change the icon - at least not on a project that is going to replication. I seem to remember one of the burning softwares could do it but can't remember which one - Dragonburn or Blaze or something but this change of icon would be a permanent part of the project I would think. Can't think of any replicated discs I've ever seen that have a different icon... why bother anyway as most DVDs are watched on set-tops aren't they?
That's my point - is a burnt disc (i.e. one created using a DVD burner in a computer - which I suspect it is) - or has been pressed. Easy to tell - if the play side is a silvery colour then it's a pressed disc. if it is a differnet colour and you can see the area that has been "burnt" into it then it's a burnt disc.
i think then the only way is finding a burning software on the Mac that allows for icon change.

And waht do you want to be able - just use your burner and burn copies of the DVD you have created? Discbalze will change the icon (I just downloaded the demo). Also perhaps the Total Training disc is a DVD-ROM not a DVD?
Total Training discs are DVD ROM discs not DVD Video and therefor can display a unique disc icon
Disc Blase is unable to create icons for DVD Video discs that will display on a computer as the Mac operating system determines the icon used not the DVD disc
