For some reason itunes wont let me add artwork to my movies. When I go to get info for the movie, the "artwork" tab is greyed out and unaccessable. Is there any other way to add artwork to movie files.

Did you ever find a solution to this. I have one video that I cannot add artwork to. I USED to have artwork which is the confusing part. But, like you mentioned, the "Artwork" tab is now greyed out.
I deleted the movie from my iTunes library (not the file on the hard drive) and restarted my MBP. Upon restart, I played the MP4 using iTunes and it added it to my library with artwork.
