How to set sustain pedal "on" on new garageband?

Hi guys,
I recently downloaded the new garageband version updated with Mavericks. Okay, it's all pretty and apple designed but now I'm lost. I don't know how to set the sustain pedal "on" when I'm recording with my midi keyboard.
Or actually, I can turn it on but I have no idea how I am doing this. Sometime it works, other time it doesn't. And if it works, it never works for the whole track, but just one section of it.
Can somebody help me?

Also, I can't find the editing part of a track anymore. You know what I mean? The "add effects" part of the instrument.

I'm very confused with that new update. Please help me! Trying to record an album here! :s
