How does one recover from a bad app update that corrupts app data?

I'm curious as to how one recovers from a bad app update that corrupts/destroys app data. How exactly does one restore the previous app version and it's data? Note, I use iTunes for OS X to sync/backup my iPhone and I have Time Machine backups of my Mac.

MacBook Pro (15-inch Early 2011), OS X Mountain Lion (10.8.4)
