Hi,
I have to recover the backup, but retuned me backup for old device I was possess it although I copy the backup data to the new device before but not retrieve it
& my new device becamemade by the old data of the old device that I don't need it;
So, Is it possible to undo the restored version of the old data and retrieval the new to me?

You can only Recover what is currently on your back up..
Have a look in iTunes under Devices, see how many back ups are shown..Maybe you have an earlier back up that you can use..
