How to use iPad 1 when apps require iOS 7?
I see that 5.1.1 is the highest level upgrade for the iPad generation 1.
Therefore how do I use apps that require iOS 7? Clearly there must be a way to use my iPad 1 with these applications.

No. just like you cant use a computer bought in 1987 to run windows 8
That's funny. Yet, this is a device that has the same principle technology as the current devices sold on the shelf. Are we incinuating that Apple is not able to dumb down applications for users who still have quality working devices?
No, we are "incinuating" [sic] that developers, Apple or anyone else, have to make a decision whether to limit their apps only to what an older device will support or move forward to new technologies and capabilities. Many developers are choosing to move forward and take advante of the capabilies of newer devices and newer versions of the operating system so as to give their apps new capabilities. The iPad 1 was discontinued three and a half years ago, so it's not at all unexpected or unreasonable for apps to come out that won't run on it.
Your iPad 1 still does what it did the day you bought it and more, and there are still a lot of apps that will run on it without problems. If you need or want an app that requires iOS 7, though, then you'll need an iPad 2 or later.

If an apps requirement says IOS 7 and the iPad 1 runs IOS 5 then it is very clear that the apps will not run on your iPad 1.
Are talking about the 20 or so Apple apps or the 1/2 million iPad apps that are not written by Apple? Are you concerened with any specific apps?
The iPad internals have changed from 1 to the latest iPad Air, the IOS has changed from versions 5 to 7. Some apps written for IOS 7 and the new iPad hardware cannot run on the iPad5 with IOS 7. Personally I think some new apps could be written that could run on new and old but it costs money to code it. It also costs IOS system resources to do that. There gets a point where the cost of system resources means the app won't run properly on the old iPad.
The 1/2 million apps written by developers and companies are interested in sales so they write new apps for the new iPads.
