I have backed up my iphone onto my itunes account but i am unable to view my photo's or contact to check to see if they have backed up onto the itunes account. How do i check these parts of my phone have been backed up? I am changing phones so need to make sure all my info is stored on my pc. Please help!

Contacts on the iPhone should not just be backed up in iTunes, they should be synced to a supported application on the computer, or with iCloud. Windows contacts, Outlook, or Mac Address book are supported.
Photos should also be imported to the computer with whatever photo import software you use like dealing with a digital camera.
While photos are saved in the backup as well as contacts, there is no way to look into the backup without 3rd party software to see what you are asking.
You need third party software to view the backup contents. There are many backup extractor programs that will do this. However, if the backup of the old phone did not fail it has all of your photos and contacts. See: http://support.apple.com/kb/ht4946 for what is stored in the backup.

You can't see what's in the back up file. There are apps such as iPhone BackupExtractor (I've never used it) that will let you extract information from your back up.
You should be syncing your contacts to an account off the phone, such as iCloud, or Gmail. Photos should also be regularly transferred off the phone to your computer.
