Why doesn't CD burned with iTunes open with track data in iTunes on another computer?

You most likely burned it with the "CD Text" option enabled. This writes the track info onto the audio CD in a standard format that most players can read.... except iTunes.

Thing that baffles me is that the CD opensin itunes in the computer that created it displaying the full data - but shows track numbers only on another computer - when opened in itunes.

On the computer that created it, the info is stored in a file, not on the CD itself.

I've a feeling iTunes creates a local CDDB style database for CDs you burn, so it knows what it is on them. Getting that information to turn up on another computer isn't so easy.

Burning audio CDs only to rip them again will lose fidelity. Burn a data disc instead or use a memory stick.

Yes, in a file called CD_Info.CIDB. It is located in Appdata rather than the library, so it doesn't carry over to a new computer when you do a normal library move.
