I can only see about 40% of screen due to large resolution..I'm not quite sure how this condition arose and don't know how to return to original screen size / resolution.

You enabled Zoom in the Accessibility app. Start by double-tapping the screen with THREE fingers. Then go to settings/general/accessibility and turn off Zoom. Or connect the phone to iTunes, click on its name, then click "Configure accessibility" on the Summary tab.
