The icon for my Twitter app is 'frozen'. The symbol is there but there's no name under it. If I press it nothing happens. If I try to remove it by holding it down, all of the other apps have the 'x' but the Twitter app does not. What should I do?

Try giving your iPad a reset. Hold down the sleep and home keys for about 20 seconds until the device reboots. See if that clears things up.
You can also try force quitting the app. Double tap the home button. scroll sideways if necessary to get to the twitter app, flick its preview up and off the screen. single tap the home button to exit the mode.
I've tried both of those options. When I touch the twitter icon on my iphone the twitter image fills the screen for a very short moment and then the page reverts to my homepage. Can't force quite and rebooting hasn't helped.

Have you tried removing the App and re-installing it?

I too had a frozen twitter app mid update, nothing worked, until I tried the reboot, that worked the update finally updated and it works now.
