How do you extend the logging of incoming & outgoing calls on iPhone5 under "Recents"?

You cannot, it's 100 entries max.

You can't; there are a fixed number of slots in Recents. However, most carriers can provide a detailed list of all calls on their website. And some carriers offer apps that can show you all of your calls.
