The cloud icon means that they are only in the cloud, and not stored on your phone - you can turn off the showing off cloud songs via Settings > iTunes & App Store > Music (under 'show all') 'off'. For music that has been downloaded or synced to your phone then you should be able to delete individual songs by swiping across them from right to left and it should get a Delete button on it (but if they were synced from your computer's iTunes then you might be able off removing them by connecting your phone and changing your sync settings, otherwise they may be synced back when you next connect it)
