Probably not. The host operating system will be using up most of the resources you need to play games.
You'd be far better off running Windows with Boot Camp is you want to play games.

Rich is correct. Parallels doesn't take advantage of the MacBook Pro's graphics adaptor. It emulates a 2D graphics adaptor. You cannot change this.
On the other hand, XP SP2 does take full advantage of the MacBook Pro's graphics adaptor (it is a good one) because XP SP2 is installed natively on the MacBook Pro hardware.
Unless when you're referring to game such as Super Mario Brothers and other such 2D games, then i'm afraid you will not have much luck with Parallels.
Parallels provide a driver with 8mb of video RAM and a 2D graphics accelerator. Making it practically impossible to play games on.
Boot Camp is a much better solution, as it uses to full specifications of your computer to run Windows nativley. Boot Camp's drivers take advantage of the full video RAM (128/256mb with Macbook Pro). Thus allowing you to play practically any game you wish.
