Is it possible to turn audio into text? Like, if I wanted to record something and the computer writes the dialogue

OS X Mountain Lion and OS X Mavericks include Dictation.

System Preferences -> Dictation & Speech -> Dictation. Make sure you turn it on. Then set a short cut key for it.

There is a product intended for Mac speech recognition via certain recorders called Dragon for Mac (there are different versions so make sure you get the one that can using recordings if you go that route).
