I am looking to buy an unlocked iPhone 4s online during the cyber Monday sales - will it definitely work in Australia? I am definitely leaning more towards the 4s due to the cheaper price, but they also have iPhone 5 models - will these too work in Australia?

So even the iPhone 5 will work in Australia? I have read a fair bit online about some problems with LTE networks - not really sure what that means but makes me a little nervous to purchase (sorry for my naivety!)
You may or may not get LTE speeds if you buy the iPhone 5.
Beware of where you buy these phones from.
Do not buy an unlocked phone anywhere but from an Apple store. Apple is the ONLY legitimate source for unlocked phones in the US (and most other countries).
LTE ("4G") bands are different around the world. A phone purchased in North America will not work on 4G in most other countries. It will still work on 3G.
Note also that if the phone ever needs repair it must be returned to the US. Apple will only service phones in the country of purchase.
