I de-selected "Sync Music" but my music is still syncing!

I am trying to remove all music from my iPhone and iPad to start afresh with the music that is loaded. I've gone to the Music tab and de-selected "Sync Music." After I hit "Apply", however, there is still music loaded to both! In some instances it is going back and re-selecting "Sync Music" in the middle of the sync. How do I get rid of all the music??
