Setting the "Actual" default Email and Browser?

I know how to set my default Mail reader (Can we say shameless self-promotion and poorly engineered location Apple? Seriously? In your own "canned" application? I love your products but some of your choices are "head scratchers" or seem like MS'isms {shudder}) but how do you get the Applications like Safari or perhaps the printing service to recognize that when you select the "Mail PDF" you want it to open your Default Mail application which isn't Apple Mail?
