Go to Settings>iCloud>Storage & Backup, turn iCloud Backup on, then either tap Back Up Now to back up right away, or connect it to wifi and your chager, lock the screen and leave it to back up automatically.
BTW, if you're in a hurry it's much faster to back up to your computer using iTunes rather than to iCoud. If you aren't currently backing up to iCloud, just sync with iTunes to create a backup. (If you are backing up to iCloud, go to the Summary tab of your iTunes sync settings and clidk Back Up Now. Then go to File>Devices Transfer Purchases.) Then, when setting up the new phone, when given the option choose Restore to iTunes Backup and restore that backup you just made to your new phone.
