If I activate an unlocked and contract free iPhone 5s/5c with an active sim card, can I still use another carrier? Or am I now locked with the carrier I used the sim card to activate my iPhone?

That depends upon where you purchased the iPhone. If it was from an Apple Store with no contract and unlocked it will not lock with anyone.
