no option to back up phone only option to restore from previous back up

Hello!

I'm having the hardest time trying to back up my phone. I plug it in and it pops up on itunes. But the only option is "set up as new iphone" (which would wipe the phone if chosen correct?) or "back up from previous back up" (which is from years ago and i would still lose everything!)

Theres no way to just...back it up. please help! (and i dont want to deal with icloud please)

i tried right clicking the phone and it just says "restore from previous back up"
