In Calendar, under the Window menu are shown a list of "gmail.com" calendars that I once subscribed to.
I see nothing that displays them on a list that gives me the option to remove them.
How do I remove one or more of them?

Hi,
They are likely to be 'delegate' calendars in Google.
You could either disable the account in Calendar > Preferences > Accounts - then select the account and uncheck 'enable this account'.
Alternatively go to www.google.com/calendar and remove the additional calendars from your Google Calendar there.
