The interface I get doesn't allow me to click on my device, nor does it show any of the options I am familiar with. Just shows a few sample tunes that I didn't choose, with no options to interact.

I don't know what the "sample tunes" are, but if this is the first time you are using iTunes 11.x, the familiar iTunes sidebar (along left side of window) may be hidden. To show the sidebar, from the iTunes menu bar, under View, select Show Sidebar.
