Why is my text green and not black as set the text color to be? I have the new Maverick and every thing seems different. The text is coming out green and not black, I delete a word and all it does is cross it out, and how do I change words like cafe to the French or Spanish form with the e'. Special symobls doesn't seem to have that available anymore in edit.

Edit menu > Turn off Tracking.
That should fix your edit problem.
To type é, just press the e-key and keep it pressed until a list comes up with different accents. Pick the e you like.
Thanks that worked. Sometimes I wish Apple would leave some things alone. If it ain't broke don't fix it. I liked finding é in the special character in Edit.
Apple has removed over 90 other features from Pages 5.
Pages '09 should still be in your Applications/iWork folder.
Archive/trash Pages 5 and rate/review it in the App Store, then get back to work.
