I thought the same thing until my company decided they needed a copy of boarding passes included with the expense report as proof that I actually used the flight that I'm expensing.
I do not believe that Passbook supports printing. You can email, but not print. Then again I'm not sure what it actually emails, if that is a graphic of the card or what. I'm going to try it with my Starbuck's card, but there is no setting for printing within Passbook.
EDIT: Actually it sends the email as an attachment for a Passbook card file, that cannot be handled by my computer. Hope that answers your question.

The easiest way would be to do a screen capture by pressing the Sleep and Home button at the same time. Then you will have a photo in Photos which you can print in the usual way.

Then your best bet is to use what Rapha el123 said. However, my one question would be, how does providing a photo of a boarding pass that does not display any info about usage going to do for the company?
The whole point behind Passbook is NOT dealing with paper or printing anything. AFAIK, that's why there's no built in print option for passbook, as it is simply not needed.
