Welcome to the Support Communities!
Are you closing the iTunes window, (clicking on the red dot), or are you actually quitting the application?
I would suggest force quitting the application, and then removing it from your Login items for your User account.
Another scenario that could be happening is a setting in Mountain Lion that reopens previously opened windows when you shut down or restart.

System Preferences controls system-wide settings ("global" settings), and is available from the Apple menu at the upper-left corner of the screen.
Click the General setting and you can choose whether or not windows re-open.
Click the Users and Groups setting to adjust your login items.

Jan 29, 2014 5:10 PM in response to judysingsby runey30012,It isnt just him... there's a huge thread of people, including myself, who say their iTunes is randomly opening (yes after being manually force-quitted) and playing and pausing music. It's terribly annoying and a fix would be much appreciated by many.

Feb 7, 2014 10:57 AM in response to sailormoonfreaxby zeretic,I too have experienced the seemingly random opening of iTunes and while I recognize this is a MacBook Air forum - the problem exists on my iPhone as well.

I have narrowed this down to various scenarios all which have a common factor - audio alerts and the connection of my Bluetooth headset (I work remotely and have a Plantronics Voyager headset for use with my phone and Skype).
When the headset is not connected I can work all day w/o iTunes opening on either my Air or my phone. Connect my headset and which ever device is my primary (the Voyager supports two connections) that device is the one which opens iTunes randomly.
I believe this is due to the A2DP implementation in the headset.

One of them is Music and once its on it's keep playing on background.
