Tap from, then tap add to contacts. Or when you start a new letter a pop up will appear of recent recipients tap the i after the name then add to contacts.

I meant a set of addresses, multiple addresses, not just the one sender.

One way would be to tap the box with the arrow then tap add to reading list. Also maybe cut and paste except I don't know where you would paste it.
I paste it to a Notepad; find this construction weak, after… how many years iOS? Well, it happens not so often to be a task, and every matter has its reason.
