I plan to buy AppleCare on the 22nd of January, but my deadline is the 24th. Will I still be able to register it if I get it after the deadline?

No. You need to register it on or before the deadline date. There is no advantage to waiting. The extended warranty picks up upon the expiration of your one-year warranty whether you buy it today or months from today as long as it is purchased before your one year warranty expires.
Not only is there no advantage to waiting there is a Disadvantage.
The Applecare extended warranty also extends the free tech phone support which normally ends at 90 days from purchase date. If you had bought the extended warranty when you bought your Mac you would of been able to call Apple with all sorts of questions for free since you bought your Mac. Not just the first 90 days.
