I am creating a new document in Pages. I accidentally hit a key or keys - like ln,ctrl,alt,cmd... and little blue arrows appeared between each word. I tried to get rid of them, and they turned into blue hyphens.
What have I done, and how can I undo it - since deleting the whole doc and starting again produces the same results ?

They are the invisibles, tabs, spaces, returns, page break etc.
Turn Invisibles off under the View menu.
PS It help if you tell us what version of Pages you are using on what version of OSX.

You simply hit command shift i which shows invisibles, instead of command i to get italics
