Can I prevent an iPhone or an ipad from being backed up by a computer? I see that I can prevent iCloud updates but I am not sure if there is any way to prevent someone from connecting their iPhone to a home computer and taking a backup with them.

What are you worried about them taking? If you're worried about data stored on a corporate Exchange server, none of that is included with the backup.
Synced contacts are stored locally on the device if I am not mistaken.
They are, but Exchange contacts are not part of the backup. They are sandboxed.
The contacts are not sandboxed from my testing though. The mail and calendar is but contacts are backed up by iTunes. I have backed up and wiped two different devices and restored them both only to see the contacts each time while the mail and calendar will not be downloaded until the password is entered.
I got off the phone with Apple business, they informed me that it is intended behavior that the iOS backup will contain exchange data and will not sanbox the information within.
Can I prevent an iPhone from being backed up by connecting it to a computer?
