I don't need many of the things listed in the Phone field label Dropdown, and i would like to add a few of my own... Can I?
ie: I would delete telex, radio, ISDN callback, TDD/TTY...
I would add the Carrier name for instance, as I have special calling rates with special Carriers...

If you mean the Label, then select Custom from the list and you can add it. New contacts will not have those, though.
If you go the the preferences, Template, and customize the list there, new contacts will have those label options.
I don't think there is a way to delete the default labels.
