I backed up my old ipad to itunes (and icloud) and then set up my ipad air as new, picking and choosing which apps, songs etc I wanted on the new one. However by doing that it didn't include the data on some of my productivity apps. How do I get that without downloading everything?

actually figured it out. I chose the apps I wanted from my itunes account during the set up as new ipad, and then when I open the app with data/content on my old ipad it sharesthe contents through the cloud over to my new ipad air. Just had to be sure both were set to cloud. sweet.
Sorry you don't with backups it all or nothing. Restore from your backup, and then just delete the apps you don't want.
