I think the OP should try Images with Originals of different file types, and if none show CMYK values, trash his/her prefs. What do you think?

But my Aperture Loupe and Color Meter are terminally set to display RGB - I could really never make it show CMYK.
Where the manual shows the cogwheel for the color options, I am seeing the "Auto Enhance" button. I don't remember, when I changed the layout of the GUI and how. It has been this way for a very long time.
I think the OP should try Images with Originals of different file types, and if none show CMYK values, trash his/her prefs. What do you think?
I can only guess, Kirby, as I cannot reproduce your result, but trying with different file types sounds good. What image format did you use?
If it does not work for Guenther with the file format you used, I'd indeed try to trash the preferences.

Thanks for the reply. I actually can switch the mode RGB, CMYK and so on by a right click in the line where the figrues are shown. It changes at the time the mode in this very window as well as in the loupe.
However it alsways just shows the RGB and wont accept the CMYK mode. There it only provides zero values.
This happens (I guess) since the latest update 5 days ago.

At some point the Action Menu (a/k/a "the gear icon") was migrated down to the bottom right of the Adjustments panel. That's where it is on my 3.4.5 installation. (Pet peeve: Apple moves these with what seems to be every revision of every app.)
Or -- per Guenter -- you can right-click the actual numerical display histogram displayed at the top of the Adjustments Inspector.

If the problem persists, report it to Apple via "Aperture➞Provide Aperture Feedback".

Now I can see the CMYK too - thank you both! Aperture 3.5.1 - it works well with jpeg, Canon raw, tiff, dng, psd.

do you know, how to find your Aperture preferences file to try to delete it?
The User Library (username/Library) is hidden by default in Mac OS X (10.7.5).
To open it in a Finder window use the "Go" menu from the Finder's main menu bar:
- Quit Aperture, if it is running. Log off and on again.
- Open the user library by using the Finder's "Go > Go to Folder" menu and hold down the options-key ⌥ , until "Library" appears in the drop down menu. Select it.
- In the widow that will open, scroll down to "Preferences"
- From the "Preferences" folder remove "com.apple.Aperture.plist".
Then try to launch Aperture again.

If it is happening on two macs in the same way, there may be a system wide problem. Try, if you can see the CMYK values, if you launch Aperture from a new user account. Create another account in the System Preferences, Users&Groups. Don't change any settings - keep it pristine.
Launch Aperture, import some image, try to see CMYK. Does it work? If you are having the same problem in a new account, trashing of preferences is useless.
Have you installed any other software at the same time as the last update? Any helpers, plug-ins, anything?

I have just tried and run aperture in a new user on the same mbp.
Same result I get the zero values.
(Hmm.. I guess I will have to try lightroom. Wonder if they show the cmyk values. This is really important to me to get these correct values, as I do color corrections from it.)
Maybe I should totally uninstall and then re install the program.

There may be a previous installation of older software interfering. Plug-ins, device drivers, video codecs, any kernel extensions. Have you checked with the manufacturers, of all your plug-ins are compatible?
You could run the free EtreCheck - a little script written by one of our fellow posters here to get a list of all extensions that might be problematic. Download it here and compare the list between your computers.
Try first to reinstall Aperture - just delete it from the applications folder (do not empty the trash), sign into the AppStore and download again.
