When iTunes syncs photos to the iPod, iTunes converts the photos to a special low-resolution format that is optimized for the iPod's small screen (to save storage space on the iPod). They are not meant to be taken back off the iPod, only used to view the photos on the iPod.
On the iPod's Photos screen in iTunes (where you set up photo syncing), there is a setting for Include full-resolution photos. If that box was checked when you synced the photos to the iPod, then you can set the iPod to Enable disk use (on the iPod's Summary screen in iTunes) and find the photos files in the Photos folder (on the iPod's storage). Otherwise, the photos are not accessible as separate image files.
There may be third-party software that can extract the individual photos from an iPod. However, the images will still be in a low-resolution format, compared to the original image files.
