The new IPhones don't allow you to sync your calendars, contacts, and other information without going through a cloud service. I don't want to use the cloud with this particular phone. This is taking away customer choice.

Boo hoo. Oh, by the way, it has absolutely nothing to do with the new iPhones.
It has to do with the fact that Sync services in OS X was depracated 2 1/2 years ago and has finally been removed from Mavericks.
USB contact and calendar sync still work just fine on Windoze.
Syncing of Contacts worked fine in Mountain Lion, but it appears to be missing from Mavericks' iTunes. Is there another syncing app available for those who don't find iCloud convenient, secure, or otherwise agreeable?
Sync services was deprecated as of OS X 10.7. It was removed as of 10.9. You can sync using whatever cloud service you like, or you can upgrade to Mavericks server and set up youro own card DAV and cal DAV service to sync with. Or you can wait until 3rd party solutions are available, probably sometime mid 2014.
Why do we have to use I Cloud to sync. calendars and contacts?
