I just got my son a new ipad I signed into it for first time using the same Apple ID that my daughter has, I want to change it and give him his own ID and password but if I erase the ID off of his will it erase my whole Apple ID off of my daughters ipad

You should be able to reset it as a new device and then set up with another account: Settings > General > Reset > Erase all content and settings.

No.

To make you more comfortable, you should backup the daughter's before doing the reset. Regular backups are a good idea anyway.
