Apple has a wordprocessor app called Pages. There are some other wordprocessor apps in the app store. Microsoft has not made an Office suite of apps for the iPad. If you buy an iPad, Pages will be free along with Numbers (like Excel) and Keynote (like PowerPoint).

You could save the document to dropbox.com and give your editors access. Good to use dropbox for backup anyway.
Could depend on what type book you are writing. What if you want to do internet research and write on your book at the same time. Could get tiring switching between two apps. There are some web browser with an included notepad split screen.
