3 last Back ups are not displayed in my iPad

I only see the last one and there is no way to see the others, I know they exist because just before I made the last back up another one was there!

You can get an indication of what's being included in your backup by going to Settings>iCloud>Storage & Backup>Manage Storage, tap on the name of your device under Backups and check under Options. You can't see the individual files included in the backup, you can only restore the backup to your device.

Aside from your backup, check Settings>iCloud>Storage & Backup>Manage storage to see how much space is being used by documents & data, and your email.

What you could do is back up your phone to your computer using iTunes, then see if you can restore an older backup that may have your photos/videos and save them to your computer if you recover them, then restore your phone back to your iTunes backup to return it to its present state.

If you want to do this, connect the phone to the computer you normally sync with, open iTunes, click on the name of your phone in iTunes, go the the Summary tab of your iTunes sync settings and click Back Up Now. Then go to File>Devices>Transfer Purchases.

Then to restore to your older backup(s), go to Settings>General>Reset, tap Erase All Content and Settings, go through the setup screens on the phone and when given the option, choose Restore from iCoud Backup and follwo the prompts. You will be shown a list of available backup to restore from like the image below. If older backups exist, you will see "Show older backups..." at the bottom (if you don't see this, there are no older backups available). Tap that to select an older backup to restore from. If you recover your photos and videos, import them to your computer from your camera roll as explained here: http://support.apple.com/kb/HT4083.

Then connect your phone to your computer again, go back to the Summary tab of your iTunes sync settings and click Restore Backup to restore the iTuens backup you made earlier.
