The best way to manage the content on the iPod touch is from the iTunes Library. When you are planning a trip, you can manually transfer media stored on your computer to the devices, and remove them to free up space when needed.

You can also download anything you've purchased from the iTunes store directly to the iPod Touch:

You can share files between your iPad and your iPod touch using Airdrop -- see the instructions below. But in preparation for a trip with a lot of content being managed, the first option would be much faster.
