My partner has an iPhone that has the same iTunes account as her ex. How do I change this without her losing contacts, notes, etc.
She also wishes to have her own account with associated credit details to download apps.

Back up to iTunes on the computer, this will save contacts and other data:
iOS: Back up and restore your iOS device with iCloud or iTunes
iOS: How to transfer or sync content to your computer
Set it up as new device and restore from the backup.
